Garden Fresh Salad

Yield: Makes about 8 servings

Ingredients

2 envelopes Knox Unflavored Gelatin
2 tablespoons sugar
1 1/2 cups boiling water
1 cup mayonnaise
1/4 cup Wish-Bone Italian Dressing
3 tablespoons lemon juice
Suggested Vegetables*

Directions:

In large bowl, mix unflavored gelatin with sugar; add boiling water and stir until gelatine is completely dissolved. With wire whisk or rotary beater, blend in mayonnaise, Italian dressing and lemon juice; chill, stirring occasionally, until mixture is the consistency of unbeaten egg whites. Fold in suggested vegetables*. Turn into 8-inch round or square baking pan; chill until firm. To serve, cut into wedges or squares.

* Suggested Vegetables: Use any combination of the following to equal 2 cups: Chopped tomato, celery, radishes, mushrooms, asparagus or cucumbers.
