Fish Chowder

Yield: Makes 6 servings (6 cups)

Ingredients

2 tablespoons unsalted butter or margarine
1/2 cup chopped onion
4 cans (6 ounces each) V-8 Low Sodium Cocktail Vegetable Juice
1 pkg. (9 ounces) frozen cut green beans
1 tablespoon lemon juice
1/2 teaspoon dried dill weed, crushed
1 lb. fresh flounder fillets, cut into 2-inch pieces

Directions:

1. In 2-quart heavy saucepan over medium heat, in hot butter, cook onion until tender-crisp, stirring frequently. 2. Add remaining ingredients except fish. Heat to boiling. Reduce heat to low; cover. Simmer 5 minutes, stirring occasionally to separate beans. 3. Add fish; simmer 10 minutes more or until fish flakes easily when tested with a fork.
