Ingredients

2 (5 ounces each) red snapper fillets
Salt to taste
Cracked black pepper to taste
All-purpose flour for dipping
2 large eggs, well-beaten
6 Tablespoons butter
Juice of 1 lemon or lime
2 Tablespoons chopped parsley
5 drops Worcestershire sauce
Garnish:
Lemon wedges
Fresh parsley

Directions:

Preheat oven to 400 degrees F

Season the snapper with salt and cracked black pepper to taste. Dip in flour, then in egg, coating the snapper completely.

Melt butter in hot ovenproof skillet. Saute fish for about 2 minutes on each side. Place in oven and cook for about 5 minutes. Remove fish to warm platter.

Place lemon or lime juice, parsley and Worcestershire sauce in skillet and cook 2 to 3 minutes.

To serve, pour sauce over fish and garnish with lemon wedge and fresh parsley.
