Stuffed Peach Halves

Ingredients

medium peaches, peeled, halved and pit removed

lemon juice

unsweetened flaked coconut, toasted
|

raisins
|
|

teaspoon |
grated lemon rind
|
|
1/2 |
teaspoon |
ground cinnamon
|
|

tablespoons |
lowfat vanilla yogurt
|
|

teaspoons |
honey
|
|

teaspoon |
vanilla extract
|
|
Directions:
Coat peach halves with lemon juice and set aside.
Combine remaining ingredients; stir well. Spoon mixture into cavity of each peach half. Chill.
