Speedy Chicken Salad
Yield: 2-3 servings
Ingredients

frozen, fully cooked, chicken breasts, diced

mayonnaise
|
|
1/4 |
cup |
celery, thinly sliced
|
|
1/4 |
cup |
grapes, red or green seedless, halved
|
|

tablespoons |
pecan pieces
|
|
|
|
salt, to taste
|
|
|
|
pepper, to taste
|
|
|
Optional: |
|
|
lettuce leaves
|
|
|
|
crackers
|
|
Directions:
In a large bowl, combine all ingredients except lettuce and crackers; mix well. Refrigerate until cold.
Place lettuce leaves on individual plates; scoop chicken mixture onto lettuce. Serve with assorted crackers if desired. Refrigerate leftovers immediately.
