Orange and Honey Mustard Roasted Vegetables

Ingredients

small green bell pepper, cut in strips

small red bell pepper, cut in strips
|

small red onion, cut in strips
|
|

|
small zucchini, cut in 1/2 inch chunks
|
|

cup |
baby carrots
|
|

Tablespoons |
olive oil
|
|

cloves |
garlic, sliced in half
|
|
1/4 |
cup |
honey mustard
|
|

Tablespoons |
orange juice
|
|
1 |
teaspoon |
grated orange peel
|
|
3 |
cups |
cooked pasta (prepared according to package directions)

Directions:
Preheat oven to 450 degrees F
Toss vegetables with oil and garlic in roasting pan. Bake for 20 minutes or until tender.
In the meantime, stir together honey mustard, orange juice and orange peel; toss with vegetables just before serving. Serve over hot cooked pasta.
